  1. Wash, core, and chop the apples into small pieces, leaving the peel on.

  2. In a large pot, combine the chopped apples with water and bring to a boil. Reduce heat and simmer for 20-30 minutes until apples are soft and mushy.

  3. Line a colander with cheesecloth and place it over a large bowl. Pour the apple mixture into the colander and let the juice strain out for at least 2 hours or overnight.

  4. Measure the apple juice and pour it into a clean pot. Add sugar and lemon juice, stirring well to combine.

  5. Bring the mixture to a boil over medium-high heat, stirring constantly to dissolve the sugar.

  6. Test the jelly for doneness using the wrinkle test: place a small amount on a chilled plate and tilt it. If it wrinkles and stays in place, it is done; if not, continue cooking and retest every few minutes.

  7. Remove from heat and skim off any foam from the surface.

  8. Ladle the hot jelly into sterilized canning jars, leaving about 1/4 inch headspace.

  9. Wipe jar rims clean, place lids on top, and secure with screw bands without overtightening.

  10. Process jars in a boiling water bath for 10 minutes to seal.

  11. Remove jars from water bath and let cool at room temperature until lids pop to seal.

  12. Store jars in a cool, dark place for up to one year. Refrigerate after opening and use within a few weeks.
