Teacup Cookies

Instructions

1. In a large mixing bowl, cream together the softened butter and granulated sugar until light and fluffy.

2. Add the egg and vanilla extract to the butter mixture, and beat until well combined.

3. Gradually mix in the flour and salt until the dough comes together. If the dough is too sticky, you can add a little more flour until it is easy to handle.

4. Divide the dough into smaller portions and roll each portion into a log shape. Wrap them in plastic wrap and refrigerate for at least 30 minutes to firm up.

5. Preheat the oven to 350°F (180°C) and line a baking sheet with parchment paper.

6. Remove the dough from the refrigerator and slice them into thin rounds to create the 'teacup' base and handle shapes. You can use a small round cutter for the base and a small, fluted cutter for the handle.

7. Place the cut dough pieces on the prepared baking sheet, leaving space between each cookie.

8. Bake the cookies for 10-12 minutes or until lightly golden around the edges. Let them cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.

9. Once the cookies have cooled, decorate them using assorted colors of royal icing to create the look of teacups, piping the icing onto the cookies to resemble the design of a teacup.

10. Decorate the teacup cookies with small edible flowers to add a whimsical touch.

11. Allow the icing to set and harden before serving.
