Wash the basmati rice and moong dal together under running water until the water runs clear. Soak the rice and dal in water for about 15-20 minutes. Drain and set aside.

In a pressure cooker or a deep pot, heat ghee over medium heat. Add cumin seeds and sauté until they start to splutter.

Add the finely chopped onions and sauté until they turn golden brown.

Stir in the ginger-garlic paste and cook for a minute until the raw smell disappears.

Add the chopped tomato and cook until it softens and the oil begins to separate.

Toss in the mixed vegetables and sauté for a couple of minutes.

Sprinkle turmeric powder, coriander powder, garam masala, and salt. Mix well to coat the vegetables with the spices.

Add the drained rice and dal to the pot and mix gently until well combined with the vegetables and spices.

Pour in 4 cups of water and stir everything together. Close the pressure cooker lid or cover the pot with a tight-fitting lid.

Cook for about 3-4 whistles in the pressure cooker or simmer on low heat for 20-25 minutes if using a pot until the khichdi is cooked through and the grains are soft.

Once done, let the pressure release naturally before opening the cooker or pot.

Garnish with fresh cilantro leaves and serve hot, either as is or with a dollop of ghee on top.
