Fermented Red Cabbage Slaw

Ingredients:
– 1 small head of red cabbage, thinly sliced
– 1 large carrot, grated
– 1 tablespoon sea salt
– 1 teaspoon caraway seeds
– 1 teaspoon mustard seeds
– 2 cloves garlic, minced
– 1 tablespoon fresh ginger, grated
– 2 tablespoons whey (strained from yogurt) or vegetable starter culture
– Filtered water
– Mason jar or fermentation vessel

Instructions:
1. In a large bowl, combine the sliced red cabbage and grated carrot.
2. Sprinkle the sea salt over the vegetables and massage them gently with clean hands for a few minutes until they start to release their juices.
3. Add the caraway seeds, mustard seeds, minced garlic, and grated ginger to the bowl. Mix well to distribute the spices evenly.
4. Transfer the vegetable mixture to a clean mason jar or fermentation vessel, pressing down firmly to pack the vegetables tightly.
5. Pour the whey or vegetable starter culture over the vegetables.
6. Fill the jar with enough filtered water to cover the vegetables, leaving about an inch of space at the top.
7. Place a weight, such as a small glass jar filled with water, on top of the vegetables to keep them submerged in the brine.
8. Cover the jar with a clean cloth or paper towel and secure it with a rubber band to allow air circulation while keeping out dust and insects.
9. Let the slaw ferment at room temperature, away from direct sunlight, for 3 to 7 days. Check the slaw daily and press down on the weight to release any trapped air bubbles.
10. Once the slaw reaches your desired level of tanginess, remove the weight and replace it with a lid. Store the fermented slaw in the refrigerator to slow down the fermentation process.
