Instructions

Preheat your oven to 350°F (180°C) and line a standard muffin tin with cupcake liners.
In a large mixing bowl, whisk together the flour, sugar, cocoa powder, baking powder, baking soda, and salt until well combined.
In a separate bowl, whisk the egg until lightly beaten. Add the buttermilk, vegetable oil, and vanilla extract. Mix until everything is well combined.
Gradually pour the wet ingredients into the dry ingredients and mix until just combined. Avoid overmixing to keep the cupcakes light and tender.
Stir in the boiling water slowly to the batter. The batter will be thin, but this is normal and will result in moist cupcakes.
