Oven Roasted Ten Herb Chicken

Ingredients:
– 1 whole chicken, about 4-5 pounds
– 2 tablespoons olive oil
– 2 tablespoons fresh rosemary, chopped
– 2 tablespoons fresh thyme, chopped
– 2 tablespoons fresh oregano, chopped
– 2 tablespoons fresh sage, chopped
– 2 tablespoons fresh parsley, chopped
– 2 tablespoons fresh cilantro, chopped
– 2 tablespoons fresh dill, chopped
– 2 tablespoons fresh basil, chopped
– 2 tablespoons fresh chives, chopped
– 4 garlic cloves, minced
– Salt and pepper, to taste

Instructions:
1. Preheat your oven to 425°F (220°C). Place the rack in the middle of the oven.

2. Prepare the herb mixture by combining all the chopped herbs, minced garlic, olive oil, salt, and pepper in a small bowl. Mix well to create a fragrant herb paste.

3. Pat the chicken dry with paper towels. Carefully loosen the skin of the chicken from the meat by gently sliding your fingers underneath the skin. Be sure not to tear the skin.

4. Using your hands, spread about two-thirds of the herb mixture under the skin of the chicken, covering as much of the meat as possible. Massage the chicken gently to distribute the herb mixture evenly.

5. Rub the remaining herb mixture over the outside of the chicken, making sure to coat the entire surface. Season the chicken generously with additional salt and pepper.

6. Place the chicken on a roasting pan or baking sheet, breast-side up. Tuck the wingtips underneath the body of the chicken to prevent them from burning.

7. Roast the chicken in the preheated oven for about 1 hour to 1 hour and 15 minutes, or until the internal temperature reaches 165°F (75°C) in the thickest part of the thigh.

8. Once the chicken is cooked through and the skin is golden brown and crisp, remove it from the oven. Tent the chicken loosely with foil and let it rest for about 10-15 minutes before carving.

9. Carve the chicken into pieces and serve with your favorite sides or a fresh salad.

Enjoy the flavorful and aromatic Oven Roasted Ten Herb Chicken with its crispy skin and tender meat infused with the fragrant blend of fresh herbs. This dish is sure to become a staple in your recipe collection, perfect for special gatherings or cozy nights at home.
