Ingredients
Instructions
-
Start by making the dough for the puris. In a mixing bowl, combine the whole wheat flour with a pinch of salt. Slowly add water little by little, kneading the mixture until you get a smooth and firm dough. Cover the dough with a damp cloth and let it rest for 15-20 minutes.
-
While the dough is resting, prepare the aloo bhaji. In a pan, heat some oil and add cumin seeds. Once they splutter, add the chopped onions and sauté until they turn translucent.
-
Add the ginger-garlic paste and green chili to the pan, followed by the chopped tomatoes. Cook until the tomatoes are soft and the mixture comes together.
-
Stir in the turmeric powder, coriander powder, red chili powder, and salt. Mix well to combine the spices with the tomato-onion base.
-
Add the diced potatoes to the pan and mix until they are well coated with the spice mixture. Add a little water as needed, cover the pan, and let the potatoes cook until they are tender.
-
Once the potatoes are cooked through, mash some of them lightly to thicken the curry. Adjust the seasoning if needed and finish with a sprinkle of fresh cilantro leaves.
-
Now, for the puris, divide the rested dough into small portions and roll each portion into a small ball. On a floured surface, roll out each ball into a thin circle.
-
In a deep pan, heat oil for deep frying. Once the oil is hot, carefully slide in the rolled out puri. Press lightly with a slotted spoon to help it puff up.
-
Fry the puri until it puffs up and turns golden brown on both sides. Remove from the oil and drain on a paper towel to get rid of excess oil.
-
Serve the hot aloo bhaji with the freshly fried puris for a delicious and satisfying meal. Garnish with more fresh cilantro leaves before serving.
