Ingredients
Instructions
-
Preheat your oven to 350°F (175°C) and line an 8x8-inch baking pan with parchment paper, leaving an overhang on the sides for easy removal later.
-
In a mixing bowl, whisk together the all-purpose flour, granulated sugar, and salt. Add the cold butter pieces and use a pastry cutter or your fingers to work the butter into the flour mixture until it resembles coarse crumbs.
-
Press the mixture evenly into the bottom of the prepared baking pan to form the crust. Bake in the preheated oven for about 15-18 minutes, or until lightly golden. Remove from the oven and let it cool slightly.
-
While the crust is baking, in a separate bowl, mix together the almond flour, powdered sugar, almond extract, and eggs until well combined.
-
Spread the apricot jam evenly over the slightly cooled crust. Then, pour the almond mixture on top of the jam layer, spreading it out gently with a spatula.
-
Return the pan to the oven and bake for another 25-30 minutes, or until the top is golden brown and set. You can check for doneness by inserting a toothpick into the center; it should come out clean.
-
Once baked, remove the pan from the oven and let the bars cool completely in the pan. Sprinkle some sliced almonds on top for an extra crunch and visual appeal.
-
Once completely cooled, lift the bars out of the pan using the parchment paper overhang. Place them on a cutting board and slice into squares or bars of your desired size.
