Ingredients

Instructions

  1. In a small bowl, sprinkle the gelatin over cold water and let it sit for 5 minutes to bloom.

  2. In a saucepan, heat the bloomed gelatin over low heat until completely dissolved. Remove from heat and let it cool slightly.

  3. In a large mixing bowl, combine the grated beets, Greek yogurt, chopped walnuts, and fresh dill. Season with salt and pepper to taste.

  4. Slowly pour the dissolved gelatin into the beet mixture, stirring continuously to ensure it's well incorporated.

  5. Lightly coat a mold or a small baking dish with cooking spray to prevent sticking. Pour the beet mixture into the mold, smoothing the top with a spatula.

  6. Cover the mold with plastic wrap and refrigerate for at least 4 hours or until set.

  7. To unmold the beet mixture, run a knife around the edges of the mold to loosen it. Place a serving plate on top of the mold and invert it to release the beet mold onto the plate.

  8. Garnish with additional chopped dill and walnuts before serving for an extra pop of flavor and texture.

  9. Slice the beet mold into individual portions and serve chilled as a refreshing and elegant appetizer or side dish.
