In a small bowl, sprinkle the gelatin over cold water and let it sit for 5 minutes to bloom.

In a saucepan, heat the bloomed gelatin over low heat until completely dissolved. Remove from heat and let it cool slightly.

In a large mixing bowl, combine the grated beets, Greek yogurt, chopped walnuts, and fresh dill. Season with salt and pepper to taste.

Slowly pour the dissolved gelatin into the beet mixture, stirring continuously to ensure it's well incorporated.

Lightly coat a mold or a small baking dish with cooking spray to prevent sticking. Pour the beet mixture into the mold, smoothing the top with a spatula.
