Ingredients

Instructions

  1. In a small bowl, combine soy sauce, oyster sauce, honey, rice vinegar, and cornstarch. Mix well and set aside.

  2. Heat vegetable oil in a large skillet or wok over medium-high heat. Add cashews and stir-fry for 2-3 minutes until lightly toasted. Remove the cashews from the pan and set aside.

  3. In the same skillet, add the shrimp in a single layer. Cook for 1-2 minutes on each side until pink and opaque. Remove the shrimp from the skillet and set aside.

  4. Add a little more oil to the skillet if needed. Stir in garlic and ginger, and sauté for about 30 seconds until fragrant.

  5. Add sliced bell peppers and onion to the skillet. Stir-fry for 2-3 minutes until the vegetables are slightly tender but still crisp.

  6. Return the shrimp to the skillet. Pour the sauce mixture over the shrimp and vegetables. Stir well to coat everything evenly. Cook for another 2-3 minutes until the sauce thickens.

  7. Add the toasted cashews to the skillet and toss to combine. Season with salt and pepper to taste.

  8. Serve the Cashew Shrimp hot over cooked rice. Garnish with fresh cilantro for a burst of freshness and color.
