Chocolate Marzipan Sugar Cookies

Instructions

1. In a large mixing bowl, cream together the softened butter and granulated sugar until light and fluffy.

2. Add in the vanilla extract and eggs, one at a time, mixing well after each addition.

3. In a separate bowl, whisk together the flour, cocoa powder, baking powder, and salt.

4. Gradually add the dry ingredients to the wet ingredients, mixing until a smooth cookie dough forms.

5. Gently fold in the grated marzipan, ensuring it is evenly distributed throughout the dough.

6. Cover the cookie dough and refrigerate for at least 1 hour to allow it to firm up.

8. Shape the chilled dough into small balls, about 1 inch in diameter.

9. Roll each cookie dough ball in additional granulated sugar to coat evenly.
