  1. In a large pot, bring the filtered water to a boil. Once the water is boiling, remove it from heat and add the tea bags, cinnamon stick, cloves, cardamom pods, ginger, and black peppercorns. Let the mixture steep for about 15 minutes to allow the flavors to infuse.

  2. After 15 minutes, remove the tea bags and spices from the pot. Stir in the organic cane sugar until completely dissolved. Let the sweetened tea mixture cool to room temperature.

  3. Once the sweetened tea mixture has cooled, pour it into a clean glass jar or fermentation vessel. Add the SCOBY and the 1 cup of kombucha from a previous batch. Make sure the liquid covers the SCOBY entirely.

  4. Cover the jar with a clean cloth or coffee filter secured with a rubber band to allow air circulation while keeping pests out. Place the jar in a warm, dark place, away from direct sunlight, and let it ferment for 7-10 days. The longer you ferment, the more tart and fizzy your kombucha will become.

  5. After 7-10 days, taste your kombucha. It should have a pleasant balance of sweetness and tanginess. If you prefer a stronger flavor, you can let it ferment for a few more days. Once you're happy with the taste, carefully remove the SCOBY and reserve 1 cup of the kombucha as a starter for your next batch.

  6. Strain the remaining kombucha through a fine-mesh sieve or cheesecloth to remove any solids. Transfer the strained kombucha to glass bottles with airtight lids for a second fermentation. You can add a couple of small raisins or a slice of fresh fruit to each bottle for added flavor and fizz.

  7. Seal the bottles tightly and let them sit at room temperature for another 2-3 days to build up carbonation. Check on the bottles daily to release excess gas by slightly opening the lids. Once your kombucha reaches your desired level of fizziness, transfer the bottles to the refrigerator to slow down fermentation.
