  1. Thinly slice the onions, core and dice the apples, and finely grate the ginger.

  2. In a large mixing bowl, combine the onions, apples, raisins, apple cider vinegar, maple syrup, ginger, mustard seeds, salt, black pepper, and red pepper flakes if using. Mix well to evenly distribute all ingredients.

  3. Transfer the mixture into a clean, sterilized glass jar. Press down gently to release trapped air bubbles, leaving at least one inch of space at the top of the jar.

  4. Slowly pour filtered water over the mixture to fully submerge the ingredients, leaving about half an inch of space between the water and the top of the jar.

  5. Cover the jar with a clean cloth or paper towel and secure with a rubber band. Let it ferment at room temperature away from direct sunlight for 3 to 5 days, checking daily and pressing down the mixture to release bubbles.

  6. After 3 days, taste the chutney. If desired tanginess is not reached, continue fermenting for another 1-2 days, tasting periodically.

  7. Once fermentation is complete, seal the jar with a tight-fitting lid and store in the refrigerator. Flavors will continue to develop as it matures.
