Ingredients

Instructions

  1. Rinse the rice under cold water until the water runs clear. Drain and set aside.

  2. In a blender, combine the cilantro, parsley, spinach, onion, garlic, jalapeño, cumin, salt, and 1 cup of chicken or vegetable broth. Blend until smooth and set aside.

  3. In a large saucepan, heat the vegetable oil over medium heat. Add the rice and sauté for 2-3 minutes or until the rice begins to turn golden brown.

  4. Carefully pour the green herb mixture into the saucepan with the rice. Stir well to combine.

  5. Add the remaining 2 cups of chicken or vegetable broth and the lime juice to the saucepan. Bring to a simmer.

  6. Once simmering, cover the saucepan with a tight-fitting lid and reduce the heat to low. Cook for 15-20 minutes or until the rice is tender and has absorbed all the liquid.

  7. Remove the saucepan from the heat and let it sit, covered, for an additional 5 minutes to allow the rice to steam.

  8. Fluff the rice with a fork before serving. Garnish with additional fresh herbs, if desired.
