Ingredients

Instructions

  1. Preheat the oven to 375°F (190°C).

  2. Cut the tops off the bell peppers and remove the seeds and membranes. Place the peppers upright in a baking dish.

  3. In a large skillet, heat olive oil over medium heat. Add the onion and garlic, and sauté until fragrant, about 2 minutes.

  4. Add the diced zucchini and eggplant to the skillet, and cook until softened, about 5-7 minutes.

  5. Stir in the cooked quinoa, chopped tomato, chickpeas, olives, oregano, thyme, salt, and pepper. Cook for an additional 2-3 minutes, allowing the flavors to meld.

  6. Spoon the quinoa and vegetable mixture into each bell pepper, pressing down gently to pack the filling.

  7. Cover the baking dish with aluminum foil and bake the stuffed peppers for 30-35 minutes, or until the peppers are tender.

  8. Remove the foil and bake for an additional 10 minutes to lightly brown the tops of the peppers.

  9. Garnish with fresh parsley before serving.
