  7. Stuff each rocoto pepper with the quinoa mixture, pressing down gently to pack in the filling.

  8. Place the stuffed rocoto peppers in the prepared baking dish and cover with aluminum foil.

  9. Bake in the preheated oven for 25-30 minutes, or until the peppers are tender.

  10. Remove the foil and bake for an additional 5-10 minutes to lightly brown the tops of the peppers.

  11. Garnish with fresh cilantro before serving.
