Ingredients

Instructions

  1. Preheat your oven to 375°F (190°C) and lightly grease a baking dish.

  2. In a skillet over medium heat, sauté the chopped onion until it's soft and translucent.

  3. Add the shredded chicken, diced green chilies, cumin, chili powder, salt, and pepper to the skillet. Stir well to combine and let the mixture cook for a few minutes until heated through.

  4. Pour about a quarter cup of the enchilada sauce into the bottom of the greased baking dish and spread it out evenly.

  5. Place four corn tortillas in the bottom of the dish, covering it completely. You may need to overlap the tortillas slightly.

  6. Spoon a portion of the chicken mixture over the tortillas, spreading it out evenly.

  7. Drizzle some of the enchilada sauce over the chicken mixture.

  8. Sprinkle a generous amount of shredded cheese on top.

  9. Repeat the layers - tortillas, chicken mixture, sauce, and cheese - two more times, ending with a final layer of tortillas on top.

  10. Pour the remaining enchilada sauce over the entire stack and make sure all the tortillas are covered.

  11. Sprinkle the remaining cheese on top, making sure to cover the entire stack.

  12. Cover the baking dish with foil and bake in the preheated oven for about 25-30 minutes, until the cheese is melted and bubbly.

  13. Remove the foil and bake for an additional 5-10 minutes until the cheese is golden and crispy.

  14. Let the stacked enchiladas cool slightly before serving.

  15. Garnish with freshly chopped cilantro and sliced jalapeños if you like an extra kick.
