  1. Start by rinsing the toor dal under running water until the water runs clear. Then, soak the dal in water for about 30 minutes. This will help the dal cook faster and evenly.

  2. In a pressure cooker or a large pot, add the soaked toor dal along with 3 cups of water. Add turmeric powder and salt. Pressure cook for about 3-4 whistles or cook until the dal is soft and mushy. If using a pot, it may take around 30-40 minutes to cook the dal on medium heat.

  3. Once the dal is cooked, mash it well with the back of a spoon or a potato masher. Set it aside.

  4. In a separate pan, heat ghee or oil over medium heat. Add the cumin seeds and mustard seeds. Let them splutter.

  5. Add the chopped onions, green chilies, and curry leaves. Sauté until the onions turn soft and translucent.

  6. Add the chopped tomatoes and cook until they turn soft and mushy, about 5-7 minutes.

  7. Pour the cooked dal into this mixture and stir well to combine. Adjust the consistency by adding more water if needed.

  8. Let the dal simmer on low heat for another 5-10 minutes to allow the flavors to meld together.

  9. Check for seasoning and add more salt if necessary.

  10. Garnish with fresh cilantro leaves before serving.
