To make the vegetarian koftas, combine the grated vegetables, chopped onions, besan, coriander leaves, ginger-garlic paste, garam masala, red chili powder, and salt in a bowl. Mix well to form a dough-like mixture.

Shape the mixture into small balls and heat oil in a pan for frying. Fry the koftas until they are golden brown and crispy on the outside. Set aside on a paper towel to drain excess oil.

To prepare the rice, heat ghee in a pan and add the whole spices - bay leaf, cloves, cardamom pods, and cinnamon stick. Sauté for a minute until fragrant.
