  1. In a large mixing bowl, combine besan, sliced onions, grated potato, chopped spinach, cauliflower, green chili, ginger, turmeric powder, cumin seeds, carom seeds, and salt.

  2. Gradually add a little water and mix well to form a thick batter. The consistency should be thick enough to coat the back of a spoon.

  3. Heat oil in a deep pan on medium heat for frying the pakodis.

  4. Using a spoon, drop small portions of the batter into the hot oil. Fry in batches, but do not overcrowd the pan.

  5. Fry the pakodis until they turn golden brown and crispy on all sides. This should take about 4-5 minutes per batch.

  6. Once done, remove the pakodis using a slotted spoon and place them on a paper towel-lined plate to drain excess oil.

  7. Garnish with freshly chopped coriander leaves for a pop of color and added freshness.
