Zucchini Gratin

Zucchini Gratin

Ingredients:
– 4 medium zucchinis, sliced into thin rounds
– 2 tablespoons olive oil
– 2 cloves garlic, minced

– 1/2 cup grated parmesan cheese
– 1/2 cup shredded gruyere cheese
– Fresh thyme leaves, for garnish
– Salt and pepper to taste

Instructions:
1. Preheat your oven to 375°F (190°C) and lightly grease a baking dish with butter or cooking spray.
2. In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for about 1 minute, or until fragrant.
3. Add the sliced zucchinis to the skillet and cook for 5-7 minutes, stirring occasionally, until they are slightly softened. Season with salt and pepper to taste.
4. In a small saucepan, heat the heavy cream over low heat until it’s warm but not boiling.
5. Layer half of the cooked zucchinis in the prepared baking dish. Sprinkle half of the parmesan and gruyere cheeses over the zucchinis.
6. Add the remaining zucchinis on top and pour the warm cream over the zucchinis.
7. Sprinkle the remaining parmesan and gruyere cheeses on top of the zucchinis.
8. Cover the baking dish with foil and bake in the preheated oven for 20 minutes.
9. Remove the foil and bake for an additional 10-15 minutes or until the cheese is golden and bubbly.
10. Garnish the Zucchini Gratin with fresh thyme leaves before serving.
