– 1 1/4 cups all-purpose flour

– 1 cup crumbled feta cheese
– 1/4 cup fresh basil leaves, chopped

Instructions:
1. In a large bowl, whisk together the flour and salt. Add the cold butter pieces and use a pastry cutter or your fingers to work the butter into the flour until the mixture resembles coarse crumbs.

2. Gradually add the ice water, 1 tablespoon at a time, mixing with a fork until the dough comes together. Be careful not to overwork the dough. Form the dough into a disk, wrap it in plastic wrap, and refrigerate for at least 30 minutes.

3. Preheat the oven to 375°F (190°C). On a lightly floured surface, roll out the dough into a circle about 12 inches in diameter. Transfer the dough to a tart pan, pressing it gently into the bottom and sides.

4. In a small bowl, toss the cherry tomatoes with 1 tablespoon of olive oil, salt, and pepper. Spread the tomatoes evenly over the tart crust. Top with crumbled feta cheese and chopped basil.

5. Drizzle the remaining olive oil over the top of the tart. Bake in the preheated oven for 30-35 minutes, or until the crust is golden brown and the filling is bubbly.

6. Allow the tart to cool slightly before slicing and serving. Enjoy it warm or at room temperature for optimal flavor.
