– 1 tsp coriander powder
– 1 tsp garam masala
– Salt to taste
– Fresh coriander leaves for garnish

**Instructions:**

1. **Prepare the Kofta:**
– In a large bowl, combine the mashed potatoes, mixed vegetables, grated paneer, cornflour, salt, and pepper. Mix well until everything is evenly incorporated.
– Shape the mixture into small round balls (koftas) and set them aside.
– Heat oil in a deep pan over medium heat. Once the oil is hot, gently fry the koftas until they are golden brown on all sides. Remove and drain on a kitchen paper towel.

2. **Make the Gravy:**
– In a blender, combine the soaked cashew nuts with a little water and blend into a smooth paste. Set aside.
– In a separate pan, heat some oil and add the chopped onions. Sauté until they turn translucent.
– Add the grated ginger and minced garlic, and cook for a minute until fragrant.
– Pour in the tomato puree and cook until the raw smell disappears and the oil starts to separate from the mixture.
– Add the cashew paste, red chili powder, turmeric powder, coriander powder, garam masala, and salt. Stir well to combine.
– Lower the heat and add the fresh cream (malai). Mix gently to incorporate the cream into the gravy.

3. **Assemble the Dish:**
– Just before serving, carefully place the fried koftas into the simmering gravy. Be gentle to prevent them from breaking.
– Let the koftas simmer in the gravy for a few minutes to absorb the flavors.
– Garnish with fresh coriander leaves before turning off the heat.
