There’s nothing quite like the aroma of warm, fluffy puris paired with spicy aloo bhaji to bring comfort and joy to your table. Aloo puri, a delightful Indian dish featuring fried bread and flavorful potato curry, is a classic combination that never fails to satisfy. Whether served at breakfast, lunch, or dinner, this dish is sure to become a family favorite for its rich flavors and satisfying textures.

**Aloo Puri**

**Ingredients:**

– For the Aloo Bhaji:
– 3 medium potatoes, peeled and diced
– 1 onion, finely chopped
– 2 tomatoes, chopped
– 1 green chili, chopped
– 1 teaspoon ginger-garlic paste
– 1 teaspoon turmeric powder
– 1 teaspoon coriander powder
– 1 teaspoon cumin seeds
– 1/2 teaspoon red chili powder
– Salt to taste
– Fresh cilantro leaves for garnish

– For the Puri:
– 2 cups whole wheat flour
– 1/2 cup water (approximately)
– Oil for deep frying

**Instructions:**

1. Start by making the dough for the puris. In a mixing bowl, combine the whole wheat flour with a pinch of salt. Slowly add water little by little, kneading the mixture until you get a smooth and firm dough. Cover the dough with a damp cloth and let it rest for 15-20 minutes.

2. While the dough is resting, prepare the aloo bhaji. In a pan, heat some oil and add cumin seeds. Once they splutter, add the chopped onions and sauté until they turn translucent.

3. Add the ginger-garlic paste and green chili to the pan, followed by the chopped tomatoes. Cook until the tomatoes are soft and the mixture comes together.

4. Stir in the turmeric powder, coriander powder, red chili powder, and salt. Mix well to combine the spices with the tomato-onion base.

5. Add the diced potatoes to the pan and mix until they are well coated with the spice mixture. Add a little water as needed, cover the pan, and let the potatoes cook until they are tender.

6. Once the potatoes are cooked through, mash some of them lightly to thicken the curry. Adjust the seasoning if needed and finish with a sprinkle of fresh cilantro leaves.

7. Now, for the puris, divide the rested dough into small portions and roll each portion into a small ball. On a floured surface, roll out each ball into a thin circle.

8. In a deep pan, heat oil for deep frying. Once the oil is hot, carefully slide in the rolled out puri. Press lightly with a slotted spoon to help it puff up.

9. Fry the puri until it puffs up and turns golden brown on both sides. Remove from the oil and drain on a paper towel to get rid of excess oil.

10. Serve the hot aloo bhaji with the freshly fried puris for a delicious and satisfying meal. Garnish with more fresh cilantro leaves before serving.
